January 6th, 2011 · Leave a Comment

Listen up local foodies!  One of our chefs has been tapped to share his expertise with chefs from across the country on preparing outstanding cuisine while using all-natural, sustainably-grown products.

Sawgrass Marriott Golf Resort & Spa Executive Chef David Scalise has been selected as a featured speaker at the 2011 Chef to Chef Conference in San Francisco. The conference, which will take place in early March, is one of the premier annual events for the club and resort industry.

Scalise’s program, Sustainable Foods Are Here To Stay, will discuss how to make sustainability an effective and ingrained practice in any food and beverage program, regardless of the setting, customer profile or operating budget.

The Sawgrass Marriott’s award-winning Augustine Grille follows standards set by Slow Food First Coast, which focuses on providing local food while maintaining quality, authenticity and sustainability. The resort also incorporates menu items produced by local and regional vendors into its catering service and other restaurants.

Congratulations to Chef Scalise! This is great exposure for the Jacksonville area food scene! More information about the Augustine Grille at the Sawgrass Marriott Golf Resort & Spa is available here.
